The owner of Cooper’s Tap House in Eagan is looking to bring a new pizzeria to the community.
Scratch Pizzeria is proposed to open early next year within the commercial center connected to the Minnesota Valley Transit Authority station on the southeast corner of Yankee Doodle and Pilot Knob roads.
The dine-in pizzeria, which would also serve salads, pasta, sandwiches, Italian desserts and more, is slated to take over the 3,000-square-foot space formerly occupied by Leeann Chin.

Cooper’s Tap House owner Randall Cooper is behind the plans.
In a memo to city officials, Cooper said $2 from every pizza sold will be donated to the youth nonprofit he founded, Eagan Sports Association.
According to Cooper, the restaurant will feature made-in-house ingredients, such as scratch-made dough, sauce, sausage and smoked meats.
The beverage menu is expected to include an array of non-alcoholic drinks, such as root beer floats and frozen zero-proof daiquiris, as well as a limited selection of beer, wine and spirits.
On Tuesday, the Eagan Planning Commission took the first step towards clearing the path for the new business.
The commission voted unanimously to recommend lifting a ban tied to the property on establishments that serve liquor — a rule that’s been in place there since 1999.
The Eagan City Council is expected to vote on the matter Monday, Nov. 6.
